Cellar Humidity
Along with temperature, wine cellar humidity
is one of the most important aspects of preserving wine. For
this reason, it is absolutely essential to ensure your wine
cellar humidity level stays constant and is exactly where
you need it to be. Because wine “breathes” through
the cork, and this is how it ages, fluctuations in wine cellar
humidity can speed up the aging process and can even result
in corked wine.
The recommended level of wine cellar humidity
for premium and stable aging of wine is anywhere from 55-75%,
depending on a number of factors. Not only does humidity above
75% accelerate the aging process, but mold often forms above
80%, causing destruction to the label and integrity of the
bottle, as well as any wooden racking. Further, wine cellar
humidity that is too low can dry out the cork, letting excess
air in and causing the cork to split when opening the bottle.
